Activities through 8-14-22

It was quiet as far as projects go this week. Anja is harvesting greens for the feast, and starting on 12th Night clothing. Loren’s mostly been working on bread and sanding projects. Other folks chimed in on Sunday for Project Day. There are a lot of links below, and even an awful Loren pun in the funnies.

No Herbs in the Garden this week. Anja’s going to be recording that evening and needs some time to get ready. Potluck is Sunday. Anja’s planning a lentil pottage and either fennel chicken or a pork roast, with a vegetable stew and most likely apple muse. Loren’s planning bread and flavored butters.

Thankfully our garden doesn’t have rabbits to whack, just the slugs & snails.

Herbs in the Garden, Sewing and Project Day are ongoing. Masks required. We’re keeping right on with the virtual meetings side-by-side with the actual.

Ongoing meeting/event! Adiantum Arts & Sciences Update
With the arrival of summer, we will once again begin meeting in hybrid meetings, outdoors, beginning on Tuesday July 19th.
On that date we will begin an 8 week series of classes and activities leading up to a mini Medieval Pilgrimage across our small town.
(already held) July 19th This will be a short history of Pilgrimages in the middle ages. August 2(already held): A brief history and hands on construction of Pilgrims Bags preparatory to our mini pilgrimage on September 24th..

August 16: a short diversion from our theme to a class on the history and construction of Arrow building 101, scheduled months ago. HL Alan Bowyer will be our guest presenter.
August 30: historic background of and hands on construction of walking sticks for pilgrimages
September 13: history of and hands on construction of bag shoes presented By HL Hrodr-Navar Hakonsson Steve Alter OP

Hello From An Tir 12th Night 2023!
12th Night 2023 will be held in the Barony of Adiantum (Eugene, Oregon). Our event site is the lovely Valley River Inn, which is happy to host the SCA again.
For those new to the site, the “SCA block” is the entire hotel! The staff is friendly, with many having been our hosts at past events in their hotel. They know us, and they love our events. At 12th Night 2020, fifty-three+ hotel staff worked with Gold Key to wear garb during the work shift. It’s a welcoming space that’s all ours for the weekend!
Your event Stewards are Dame Yseult of Broceliande Ol, OP (Pam Perryman) and Honorable Emma Haldane (Esther Reese).The best way to reach them is to send an email to 12thnight2023@antir.org.
The event email will be checked at least once a day, and usually several times a day.

Early Week – Not much happening, except for the usual watering and some scheduling of classes and recordings.

Cookery – During the week Anja did a bunch more greens harvesting and prep. More greens were harvested Friday evening, soaked overnight and prepped on Saturday. On Saturday she also started a lentil pottage since we’re used up all the frozen ones.

With the monasteries owning much of the farmland Ruth, Peter and Tom are well aware of the importance of praying for a successful harvest.

Sewing – Anja is starting to work on 12th Night clothing.

Flax to linen: from sowing to sewing. – Rob Stephens – As a break from scything videos, this is an overview of my venture into flax processing from seed to thread.
The simple cloth and thread I’ve managed to produce are some way off the quality usually associated with linen, but hopefully they give some idea of what goes into producing these goods.
Although I have spun wool, I’m fairly new to spinning flax and weaving. This is just my second proper year of growing and processing flax and, although it’s a lot of work and sometimes the fibre is very frustrating to work with, it can be enormously satisfying to produce one’s own thread, cordage and cloth. I learnt a great deal in the first year, and a lot more this year; I continue to learn and make mistakes!
Tools: apart from the rigid heddle loom, wool carders and berry picker, I have made my own tools or adapted them from other stuff – the spinning wheel treadle is from an antique Jones sewing machine. I built the seed cleaner using an open-source design kindly supplied by realseeds.co.uk (and it works well).
Growing: due to bad weather at the start of the 2021 growing year, sowing was delayed 2-4 weeks here in the North of England; the flax still grew, if not quite as tall as in the previous year, and I harvested it after around 100 days from sowing. Note that I was growing the flax for fibre, not seed, but there was still a fair amount of seed that appeared to have ripened – perhaps it’s not all viable but we’ll see next year!

Samplers were created as a mark of achievement in needlework by young ladies as they progressed in their education. Herb Bunch – Watering and harvesting this week, mostly. Anja’s been working on a greens harvest, prepping and freezing for winter soups.

This week’s gleanings were:

  • Celery – greens and blossoms
  • Chive blossoms
  • Garlic scapes
  • Carrot – greens and blossoms
  • Oregano
  • Dandelion greens
  • Summer lettuce – greens and blossoms
  • Plantain greens and seed heads

Those all went in with the kohlrabi and onion greens from last week.

Seed pops got planted in pots where nothing had sprouted. These are seeds wrapped in clay and worm castings in a popsicle stick with the plant names on it.

  • Stir fry pop – thai basil, garlic chives, pak choi
  • Bumble Bee pop – china aster, lance-leaved and plains coreopsis, purple coneflower, wild bergamot, black-eyed susan
  • Super greens pop – spinach, kale, wheatgrass

Beans got planted and slug bait set out, as well.

“A lentrade del tens clar”, often “modernized” in “A l’entrada del temps clar”, is a ballad originating from Occitania and is one of the most famous and beautiful musical themes that survived the time and came down to us directly from the twelfth century. The May Day Celebrations, (Calendimaggio) were among one of the most celebrated popular holidays in the European Middle Ages.
Ancient pre-Christian reminiscences linked to the cult of Nature and the harvest, which are necessary to be able to survive more than anything else.
In this minimal and rustic performance, no arrangement is taken into account that could make the melody that has come down to us more captivating. Each note is played exactly as it was written, each word sticks to the original text and you can see it yourself reading through the manuscript in the video.The idea is to evoke the suggestive, rural, festive and folk impressions present in the lyrics of this “Ballata”.The text is shown below both original and translated into English, have a good listening.

Activities through 8-7-22

Cooking and vegetables were the focus in the early part of the week, plus Adiantum’s A&S night. Later in the week there was some sewing and garden work. Project Day was very quiet, so I did a bit of clipart.

Cookery – 

The new redaction got tried on Tuesday (recipe below). Easy peasy, and it might made a decent dish for the side table for feasts.

Farmer’s market – They had kohlrabi! I also got carrots, a squash, some onions, new potatoes, lemon cucumbers, green beans, cherry tomatoes, blueberries, cherries, plums and blackberries. I think I went a little overboard….

…but we had kohlrabi and new potatoes in butter sauce with a bit of bacon for protein as supper. Some of the kohlrabi were old enough to be “splintery”, but most were just great, and the *flavor*!!!!! ….and new potatoes are just delicious.

Tempus made bread on Thursday. A roll with cucumber slices & butter, plus a little soup, makes a great lunch.

I spent awhile on Wednesday chopping up the harvested greens after I got the them washed, but the kohlrabi greens had to wait into night, since my hands were giving me heck from peeling the kohlrabi…. worth it, though…. finished up the greens… one more set to go. …

The rest of the soup got frozen Thursday morning.

…and I was still eating fruit on Sunday! …and the rest of the plums are going into jam on Monday.

Herb Bunch – Watering and weeding mostly this week. I was out in the garden on Wednesday for Herbs in the Garden, mostly weeding, and I got the worst-off of the cardoons replanted. I was thinking about putting out the slug bait that Tempus bought, but I didn’t get that far. I was harvesting some overgrown herbs and greens, too. I have a couple of tomatoes that I’m keeping an eye on, but they’re not ripening, yet.

Project Day – Anja worked on the report and chatted with a few people online.

Helen Louise wrote, “Helen Louise – Busy getting ready to go to Crater Lake for a few days. My workroom is a mess, had a group of teens learning to sew this week and people needing garb consults from Gold Key. A reminder that 12th Night 2023 will have a Venetian ball, so start thinking on what fancy garb is in your era… I’m doing Elizabethan goes to Venice 1570s. SCA prom, here we come…”

Arlys wrote, “Project Day. The blackworked cover for the Etymology miniature book. Book is approx. 1.5 ” tall, .75″ wide, and 0.5″ thick.”

Feast Planning – The egg recipe will work for one of the afternoon dishes.

Recipes

Eggs in Mustard Sauce – Anja’s version – edited from Kiriel’s Kitchen – 6 servings

Ingredients

  • 1 dozen eggs (older are better, good way to use ‘em up!)
  • 1/2 stick butter (4 TBSP)
  • 2 TBSP mustard
  • splash of cider vinegar
  • salt to taste (I just sprinkled it well)
  • ½ tsp horseradish powder

Method

  1. Hard boil the eggs – old eggs are best for this as they will peel much more easily than new.
  2. When you’re ready to serve, peel the eggs and quarter them and put into bowls (2 per serving.
  3. Melt the butter in a saucepan and allow it to brown just a little, add the rest if the ingredients and stir well until it thickens.
  4. Pour over the eggs and serve.

Note – This is a quick snack or light supper, especially with various pickles and a roll. The eggs can be cold or warm.

Original recipe – Seeth your Egges almost harde, then peele them and cut them in quarters, then take a little Butter in a frying panne and melt it a little broune, the put to it in to the panne, a little Vinegar, Mustarde, Pepper and Salte, and then put it into a platter upon your Egges. –J. Ongoing meeting/event! Adiantum Arts & Sciences Update
With the arrival of summer, we will once again begin meeting in hybrid meetings, outdoors, beginning on Tuesday July 19th.
On that date we will begin an 8 week series of classes and activities leading up to a mini Medieval Pilgrimage across our small town.
(already held) July 19th This will be a short history of Pilgrimages in the middle ages.
August 2: A brief history and hands on construction of Pilgrims Bags preparatory to our mini pilgrimage on September 24th.. This will also be hybrid FB Live and in person event. WHAT TO BRING; You should bring a chair, a drinking vessel, a pair of fabric scissors, needle, thread, and 1/2 yard of fabric of your choice. Recommended fabrics are canvas, heavy linen, heavy cotton, or wool. Period options would have most likely been linen or wool. I will have supplies available for those who do not have such items on hand..

August 16: a short diversion from our theme to a class on the history and construction of Arrow building 101, scheduled months ago. HL Alan Bowyer will be our guest presenter.
August 30: historic background of and hands on construction of walking sticks for pilgrimages
September 13: history of and hands on construction of bag shoes presented By HL Hrodr-Navar Hakonsson Steve Alter OP
Saturday September 24th: pilgrimage across our small town with a couple of stops along the way and a celebration at the end of the day:
2 stops at local ‘churches’, (one is presently a restaurant and the other a community service center). The walk will end at a local church and conclude with a celebratory feast.
Participants will receive a scallop shell token to hang on their walking sticks and a passport at the beginning of he walk.
Each will receive a pewter token and a stamp on their passport at each stop.
On arrival at the destination they will receive a Compestella (certificate of completion), and will join in a celebratory 14th century Festus of a similar nature to that prepared historically at pilgrimage stops.
The distance covered in this pilgrimage will be minimal, about 1.5 miles, with 2 stops en route.
We will be in garb, using our bag shoes, walking sticks, and pilgrims bags and we will carry banners. Our Chatelaine, Dame Johanna Trewpeny will be a member of our company, should we encounter mundanes curious about our presence and our purpose. This will be a rain or shine event, so dress for the weather. And we will be using FB Live as we progress.
More details will be posted this evening on each event, as FB allows me (we have been arguing all day about whether i should be able to edit via my phone).
So there are a whole lot of fun events coming up! Lets enjoy the beautiful weather and each others company while we learn more about the past by bringing it into our future!

Hello From An Tir 12th Night 2023!
12th Night 2023 will be held in the Barony of Adiantum (Eugene, Oregon). Our event site is the lovely Valley River Inn, which is happy to host the SCA again.
For those new to the site, the “SCA block” is the entire hotel! The staff is friendly, with many having been our hosts at past events in their hotel. They know us, and they love our events. At 12th Night 2020, fifty-three+ hotel staff worked with Gold Key to wear garb during the work shift. It’s a welcoming space that’s all ours for the weekend!
Your event Stewards are Dame Yseult of Broceliande Ol, OP (Pam Perryman) and Honorable Emma Haldane (Esther Reese).The best way to reach them is to send an email to 12thnight2023@antir.org.
The event email will be checked at least once a day, and usually several times a day.

Early Week – Most of this was finding things and putting them away after the demo. A bunch of stuff is still in Eugene. During the week it was all transferred to Helen’s, so we’ll have it for Shrewsbury.

Cookery – Greens got harvested for a beef broth based vegetable soup and lots of leftovers went in, too. Found some interesting recipes that Volker Bach posted for sausages, one of which is pretty much blancmange stuffed into a tube. Making a Basic 16th Century Flat Cap – Lynne Fairchild – We are going back to basics today with sewing a simple 16th century bonnet, also known as a Tudor flat cap! If you have never done any sewing at all but would like to try historical costuming, this is the video for you! Worn by both men and women, this head covering was typically made of wool and was usually black. However, these caps could also be made of silk and/or be red in color. It started out as a peasantry hat from the 14th century, but made its way to the merchant and nobility class in the 16th century.

Historic Examples of the 16th Century Bonnet, aka a Flat Cap – Lynne Fairchild – Some historic examples of the 16th century bonnet, aka a flat cap, along with pattern instructions on how to make your own. Most bonnets were made of wool. Black was the most common color used for this head covering. sumptuary law from 1571 required every non-noble male over the age of 6 to wear a wool cap on Sundays and holy days, or face a 3 shilling fine.

Jactus – An ancient Roman dice game, played with five dice, for two to four players.  You also need coins and cards, but any tokens or counters will substitute for them. http://www.dice-play.com/Games/Jactus.htm

Play:

  • At the start of a game the following number of cards/tokens and coins are placed in the centre of the playing area, depending on the number of players taking part.
  • 4 players: 3 “Venus” cards/tokens, 6 “dog” cards/tokens, and 3 coins
  • 3 players: 2 “Venus” cards/tokens, 4 “dog” cards/tokens, and 2 coins
  • 2 players: 1 “Venus” card/token, 2 “dog” cards/tokens, and 1 coin
  • Players in turn roll the dice and try to get five-of-a-kind.  Players may keep as many of the previous player’s dice and roll the remaining ones in their turn.
  • A player who makes 1, 1, 1, 1, 1 claims a coin.  A player who makes 6, 6, 6, 6, 6 (Jactus Venereus) claims a Venus card/token.  A player who makes five of any other number (Jactus Canicula) claims a dog card/token.
  • Once a player has made five-of-a-kind and claimed their reward, they roll all the dice again in the next round.  If a player is unable to claim their card/token or coin from the centre because there are none left, they may take one from another player.
  • The first player to hold a Venus card, two dog cards, and a coin, wins the game.

Recipes

Ingredients list (Anja’s interpretation)

  • 1/2 pound frozen chicken breast, cooked just until tender and 165 internally.
  • 2 TBSP bacon fat (or chicken or duck schmaltz)
  • 1/2 pound almond meal
  • 1 pound confectioner’s sugar
  • Orange flower water or rose water (amounts will vary)

Marzipans for invalids who have lost the desire to eat, very good and of great sustenance

  1. Take a chicken breast and simmer it in salted water until thoroughly cooked – but try not to overcook as it will make the chicken dry.
  2. Weigh the cooked chicken breast and measure out the same weight of almond flour and sugar.
  3. Grind them all together in a food processor. [Anja’s note – You will probably have to add at least a little liquid, use the orange flower water….]
  4. If you don’t have any wafers handy you can, at a pinch make these and just form them directly on to a sheet of baking parchment. Make the sides a little raised.
  5. Moisten with orange flower water
  6. Sprinkle with caster sugar and then sprinkle a bit more orange flower water on top.
  7. Bake in the oven at a moderate temperature until they are lightly browned. They can be eaten either warm, or cold.

Take a very fat capon or a hen which is very fat, and cook it with just your salt until it is very well-cooked; then take the breasts from it, and all the white meat without skin, and weigh that meat, and take as much peeled almonds, and combine the meat and the almonds; and take as much fine white sugar as all of this, and grind the almonds a great deal, and then the meat with them, and then the sugar; and then grind everything together, and stretch that dough upon a wafer, and make little marzipans of the size that you wish; and make the edges a little high, and let it be a little deep in the middle; and moisten it with orange-flower water with some feathers.

And then sprinkle fine ground and sifted sugar over that water, and then moisten it again, and sprinkle it as before; and then cook them in the oven in some flat casseroles, and paper underneath; and let the fire of the oven be moderate; and upon removing it from the casserole, the paper must be cast off of each one, (70) in such a manner that the marzipan does not break.

And this is a very singular dish and of great support for the invalids who have lost the [desire] to eat; because the little of this that they eat is of more sustenance than any other thing; principally drinking in addition to it the sulsido of hens made in the jug; and this is beyond estimation.

Misc – About Knightdom – Thoughts of a Peasant (by Perdita von Bremen / Petra Brandes)

During the event “Bring out your Dead”, when I was serving the knights’ table, they sat me down and asked: “What do you expect from a knight?” Someone later said I should write down my answer and post it in Drachenwald, or at least in Knights Crossing.

When the knights asked me that question I thought a moment and answered: “Kindness. Because out of kindness comes everything else.” And they had me explain.

Kindness expresses itself in many ways.

A kind person does not steal a victory, but gracefully accepts defeat.

A kind person never says things behind somene’s back that he would not want to have screamed aloud by a herald, but finds something good to say about everyone (or shuts up).

A kind person is never condescending to anyone, no matter the status.

A kind person takes a rejection with equanimity and does not press his advances on an unwilling person.

Kind persons praise the achievement of others, pick up crying kids, help those in distress, don’t hog the limelight… so many things. In former times all this was called manners.

In other words: When you are kind, you don’t treat a tavern wench different from a king. If you want to be a knight, let kindness be your first virtue.

About virtues: I don’t expect a knight, any knight, to be the epitome of all that is virtuous, but I want them to inspire me, to make me want to learn from them.

Elffin of Mona once taught me something important. It was a long day in the listfield, and he came to where I sat in the shadows, sweaty and exhausted. I had no idea who he was, but got an inkling when several people came up to him and addressed him as ‘Your Majesty’. I asked whether he wanted me to leave, and he said no. So I happened to listen to what people had to tell him

Frankly, I would have been bored stiff in his place, but he never wavered from friendly, genuinely interested listening to even the most trivial stuff. When everybody was gone I asked, if he was not bored by some of it, especially when some only came to say: “Look! I have done this!”

He answered: “No, I am never bored. People are interesting, and you never know what they have to say until you listen to them.”

“Even, if they only tell you they’ve brought a chair from here to there?”

“Even then. He did his part of service to the crown, and it’s my duty to notice and appreciate it.”

Boy, was I impressed! Here I was, newbie par excellence, and a king – who did not even know my name – was genuinely interested in me and taught me the most valuable lesson of them all.

These days I want to look at a knight and think:

‘I like how they turn the whole body to people when they address them. I want to be able to do that.’

‘I like how she makes me feel like the most important person in the room, when she talks to me. I want to do that, too.’

‘I like how he remembers that people want to talk to him and comes back to them. I should do that, too.’

Dear knights and squires: Make me want to learn from you. That’s all I ask for – other than adhering to ‘Wheaton’s Law’.

Then a knight brought up the fact that he had advanced in years and does not feel so ‘knightly’ anymore.

Sir, now begins the most difficult part of your job, and I don’t envy you that task.

You have to teach your eager squires that there is more to being a knight than being able to wield a weapon and have success in the listfield, more than the splendour and grandeur of a white belt and a chain.

Every idiot can pick up a weapon and fight. Even I can, and maybe even successfully bonk someone on the head in the listfield (while desperately gasping for air). Won’t make me a knight though. I could by some freak happening be awarded belt and chain and strut around in finery – it still won’t make me a knight. Being a knight is something completely different.

The hardest fight of a knight is not on the listfield, but beyond it: It is teaching that being a knight is a state of mind, and if a squire can’t bend his mind around that, he will never be a knight, even if he were to be accorded the outer accoutrements of one some day.

So there, these are my thoughts about knightdom and what I expect from a knight.

Ongoing meeting/event! Adiantum Arts & Sciences Update
With the arrival of summer, we will once again begin meeting in hybrid meetings, outdoors, beginning on Tuesday July 19th.
On that date we will begin an 8 week series of classes and activities leading up to a mini Medieval Pilgrimage across our small town.
July 19th we will meet hybrid via FB live. This will be a short history of Pilgrimages in the middle ages. It should be noted that not all pilgrimages were spiritual and this activity will inform about both the spiritual and personal reasons historically recorded for pilgrimages. This activity will be crafted in a way to allow those of all beliefs to feel welcome to these activities.
August 2: A brief history and hands on construction of Pilgrims Bags. This will also be hybrid FB Live and in person event.
August 16: a short diversion from our theme to a class on the history and construction of Arrow building 101, scheduled months ago. HL Alan Bowyer will be our guest presenter.
August 30: historic background of and hands on construction of walking sticks for pilgrimages
September 13: history of and hands on construction of bag shoes presented By HL Hrodr-Navar Hakonsson Steve Alter OP
Saturday September 24th: pilgrimage across our small town with a couple of stops along the way and a celebration at the end of the day:
2 stops at local ‘churches’, (one is presently a restaurant and the other a community service center). The walk will end at a local church and conclude with a celebratory feast.
Participants will receive a scallop shell token to hang on their walking sticks and a passport at the beginning of he walk.
Each will receive a pewter token and a stamp on their passport at each stop.
On arrival at the destination they will receive a Compestella (certificate of completion), and will join in a celebratory 14th century Festus of a similar nature to that prepared historically at pilgrimage stops.
The distance covered in this pilgrimage will be minimal, about 1.5 miles, with 2 stops en route.
We will be in garb, using our bag shoes, walking sticks, and pilgrims bags and we will carry banners. Our Chatelaine, Dame Johanna Trewpeny will be a member of our company, should we encounter mundanes curious about our presence and our purpose. This will be a rain or shine event, so dress for the weather. And we will be using FB Live as we progress.
More details will be posted this evening on each event, as FB allows me (we have been arguing all day about whether i should be able to edit via my phone).
So there are a whole lot of fun events coming up! Lets enjoy the beautiful weather and each others company while we learn more about the past by bringing it into our future!

A potluck will be held Saturday, with a roast provided by the Thegn Clovis and Baronesa Ximena. All attendees are encourage to bring a tasty dish to share

Hello From An Tir 12th Night 2023!
12th Night 2023 will be held in the Barony of Adiantum (Eugene, Oregon). Our event site is the lovely Valley River Inn, which is happy to host the SCA again.
For those new to the site, the “SCA block” is the entire hotel! The staff is friendly, with many having been our hosts at past events in their hotel. They know us, and they love our events. At 12th Night 2020, fifty-three+ hotel staff worked with Gold Key to wear garb during the work shift. It’s a welcoming space that’s all ours for the weekend!
Your event Stewards are Dame Yseult of Broceliande Ol, OP (Pam Perryman) and Honorable Emma Haldane (Esther Reese).The best way to reach them is to send an email to 12thnight2023@antir.org.
The event email will be checked at least once a day, and usually several times a day.
Site Fee is $30.00, with a $5.00 discount for SCA members. There is no pre-registration or payment; pay and sign in at the gate.

Activities through 7-17-22 Potluck and Coronation

Every time I write “this was a quiet week” I sigh to myself, because the weeks aren’t exactly quiet for *me*, but quiet as far a House things go. …and this was one with the exception of the potluck prep.

The lovely beans on Thursday….

The garden is still fighting the slugs and snails. I’m starting to understand those knights battling them in marginalia! We’ve lost all the beans now, and most of the onions are gone… including Audrey!

12th Night 2023 will be held in the Barony of Adiantum (Eugene, Oregon). Our event site is the lovely Valley River Inn, which is happy to host the SCA again.
For those new to the site, the “SCA block” is the entire hotel! The staff is friendly, with many having been our hosts at past events in their hotel. They know us, and they love our events. At 12th Night 2020, fifty-three+ hotel staff worked with Gold Key to wear garb during the work shift. It’s a welcoming space that’s all ours for the weekend!

Early Week – Amy stopped by on Monday with a bag of scraps for pouches.

Cookery – We watched all week for the fennel to flower. On Monday they were just starting. On Thursday, they were “almost”. We harvested one batch Friday evening, and another Sunday morning. Tempus baked a batch of bread on Saturday, so we’d have some for the potluck.

Making a Tasselled Belt for a Bronze Age outfit – Today I’m finishing a bronze age inspired woollen tasselled belt to go with my outfit ready for the Festival of Archaeology. It’s an interpretation rather than an exact copy, but it’s giving me a chance to improve the overall look of this costume. Herb Bunch – On Monday Loren and Anja did some plant tending at the shop, including the parsleys that had suffered a slug attack in the garden and been brought into town to keep a closer eye on them. On Tuesday Anja worked on weeding while he watered the whole garden. We also got an Oregon Grape start into a bucket. Hopefully, it’ll take. The beans have come up.

…and then the planter box that the beans were in, got dumped, while Loren was working on the plant trellis. So it got picked up and put back together, but it’s anyone’s guess how the plants will do.

Watering happened again Friday evening and fennel flowers were harvested and the hard stems snipped away. Sunday morning strawberries/blueberries were harvested and a stem of lovage for the cookery, and then more of the fennel blossoms.

Project Day – Started the day talking with Gudrun. She’s come down with the Plague. 😦 Talked with Helen Louise for a bit about the demo next weekend. Peggy posted a great set of process pictures of her trial of the Norse Apple-Nut cake recipe. (In “Recipes” section) Anja got a little sewing done and Loren a little sanding.

Potluck – Nibbles were out on the table, early. Cooking started around 3pm and it took quite awhile to get the chicken far enough to be skinned and boiled. By 5:30 we were heating up the soup and cooking the cabbage.. Not long after that the chicken was finished being skinned, boned and chunked… *not* the original recipe, but I did want Loren to eat some!

We ended up eating at home, since it was just two of us. The chicken was good, although better before I addeds, “just a little more cinnamon”. <sigh> I’ll know better next time. Before that unfortunate choice, there was a nice balance of fennel and ginger in the dish. I might just leave out the cinnamon and serve with cinnamon/clove/cardamom sugar on the side. This is going to be a good feast dish, since it can be done entirely ahead and just heated. I’m going to harvest, snip (de-stem) the rest of the fennel flowers, so we can!

No, the bug in the apple muse didn’t stay there. He was discovered after the photo was taken and unceremoniously escorted of the feast, taking flying lessons by means of a spoon catapult!

Norse Apple Nut Cake – Recipe by Peggy Vlach, edited by Anja- So here is my first try at making the Norse apple/nut cake. I think that 1 1/2 cups of honey is too much, next time I will cut that amount in half. What with all the honey and the eggs the batter was very runny….it took 30 minutes instead of 15 to set up in the oven at 350 degrees. However, it is yummy.

  • 1 cup chopped dried apples
  • 2 cups toasted chopped hazelnuts (Safeway has chopped hazelnuts in their baking section)
  • Apples and nuts mixed in a bowl
  • ¾ of your favorite honey
  • 4 eggs

Method

  1. Preheat oven to 350.
  2. Chop the dried apples and measure 1 cup.
  3. Put into a bowl.
  4. Toast hazelnuts and chop. Measure two cups.
  5. Add to bowl and mix.
  6. Measure 1 ½ cups of honey. Add to bowl and mix.
  7. Add eggs and mix very well.
  8. Spread in a 13×9 pan, lined with foil to contain mess.
  9. Bake in pre-heated oven for 15-30 minutes until golden brown on top and set.
  10. Let cool and serve warm or cold.

Medieval Chicken with Fennel Flowershttps://historicalitaliancooking.home.blog/english/recipes/medieval-chicken-with-fennel-flowers/ – ITALIANO – from Anonimo Veneziano, Venetian source, 14th century. Anja’s adaptation

A serving on a trencher bread with lentil/pea soup and cabbage dish.

Ingredients

  • 1 flat of chicken thighs, approx.. 4-5 pounds.
  • Water to cover
  • 1 TBSP salt (or to taste)
  • 1 cup bacon fat (or other hog fat, but bacon tastes good!) You can usually get this amount from a pound of bacon.
  • 1 handful of fennel flowers (cut flowers from the ends of the stiff stems!)
  • 1 ½ cups almond flour)
  • Small piece fresh ginger
  • Mix of sweet spices (cinnamon, , cloves, Indian bay leaves) or powder douce.

Method

  1. Mix almond flour and fennel flowers together. (This may be done ahead of time.)
  2. Grind spices. (This may be done ahead of time.)
  3. Cut up bacon and fry. Let cool. Strain bacon fat into a cup and save the rest for other purposes. (This may be done ahead of time.)
  4. Peel the skin from the chicken. (This may be done ahead of time.)
  5. Parboil chicken. (This means to cover the chicken with water, salt it, and bring to a boil, then pull out of the liquid and set aside (it won’t be fully cooked!) **
  6. Strain the broth and set aside. If you stop at this point, refrigerate both chicken and broth, separately, then skim any grease from the broth and discard.
  7. Melt the bacon fat.
  8. Add the chicken. (Chicken was de-boned and chopped before this step!)
  9. Mix the flour/flower mixture and the various spices.
  10. Reserve 1 TBSP for step 16.
  11. Mix the rest with 2 cups of the chicken broth.
  12. Give the chicken pieces a few minutes to begin to warm up, then add the broth and seasonings mix.
  13. Let simmer for 15 minutes and turn over/stir.
  14. Simmer for another 15 minutes, stir, and check for done-ness
  15. Put the chicken on a serving platter or a shallow bowl.
  16. Stir the sauce well, cooking a little longer, if necessary, then pour over the chicken and dust with the reserved seasoning mix.

** Anja’s note – Because the chicken was frozen, it had to be cooked far enough to get the skins off and by that time it was close to temperature! 5 pounds was too much chicken for the pot, too, so I decided to bone and cut up before frying/cooking, and then reserve some for another day.

Original recipe – Toy li polastri e smenbrali e fali bolire e non tropo e frizelli in lardo; toy mandole, fiore de fenochio e masena ogni cossa in sema e distempera con la lessadura de li polastri e poy dali per scutelle e metili specie dolce.

Translation – Take the chickens and cut them in pieces. After boiling them a little, cook the meat with lardo. Grind almonds and fennel flowers together, and dissolve them in the chicken sauce. Plate adding sweet spices.

Herb Bunch – 

No Farmer’s Market and Anja was the only one for Herbs this week. No pix, either. Strawberries and raspberries were harvested each day, about an 1/2 handful. Monday’s harvest at the shop was sweetgrass and rose petals, then sweetgrass was harvested from the bucket in the garden on Wednesday and prep went on on those all week. There wasn’t enough (or long enough) sweetgrass to braid, so it was all chopped for drying. The rose petals and a few buds got prepped and then set by to dry.

Activities through 7-3-22 AnTir/West War

Anja and Loren had a crazy week. People going to War had a crazy week. Too bad they didn’t match up! Garden stuff this week, Herbs in the Garden workshop, cookery with an interesting cucumber (squash) recipe, some great links and a couple of really funny ones, too.

12th Night 2023 will be held in the Barony of Adiantum (Eugene, Oregon). Our event site is the lovely Valley River Inn, which is happy to host the SCA again.
For those new to the site, the “SCA block” is the entire hotel! The staff is friendly, with many having been our hosts at past events in their hotel. They know us, and they love our events. At 12th Night 2020, fifty-three+ hotel staff worked with Gold Key to wear garb during the work shift. It’s a welcoming space that’s all ours for the weekend!

Early Week – Not a lot once the report was out, mostly Loren and Anja were getting ready to move home. No, they don’t have the part, but they have a work-around that will function for awhile. …and some garden stuff, both at the shop and in the actual garden.

Cookery – 

Farmer’s Market this week was: new potatoes, funky carrots, squash, onions, leeks and cherries.

Anja tried to make a leek and potato soup during the week. It’s pretty simple: leeks, potatoes, salt, caraway…. but the leeks were from last fall and very tough. Anja didn’t realize that they needed extra peeling and when the soup was done it was full of …. splinters… for lack of a better term, and they had to toss it. <sigh> So, more leeks this coming week and we’ll try again!

The weekend was nuts because of the holiday. Anja made some swimming sausages for a couple of meals, but nothing other than that.

…Of course, we’re harvesting berries each day and lettuce from the porch planters….

Herb Bunch – Watering happened 3 times this week, because of the heat over the previous weekend.

Herbs in the Garden – Mostly was weeding, but one set of beans got planted, ….keeping my fingers crossed that the slug population is going to die down in the drier weather…. lots of strawberries and raspberries got picked, a handful each morning, some pictures got taken. Geranium starts from another of the leggy ones at the shop got done. A few thimbleberries got picked out at the spring. …and watering. It’s summer and dry….

Project Day – Was just Anja, no Loren even, since the shop was open late because of the fireworks and he had to nap during the day, so that he’d survive the paper route. Anja talked to folks online. Gudrun is doing well, but mostly doing cosplay. She also managed to get one of the sanded spoons buttered and it’s now in the largesse pile…. which none of the three people who said they’d stop by on the way to War, remembered to get!

Stuffed Cucumbers from de Rontzier

Of stuffed cucumbers

You shall peel the cucumbers if they are old, but not if they are young.

Item you chop veal with eggs, white bread, pounded ginger and a little salt, fill the cucumbers with this, cook them, and dress them with capers and butter so that they have a short broth (kurtz von brueh sein) etc.

You chop veal with sheep fat (Schaffsunschligt), eggs, parmesan cheese, pepper and salt and fill the cucumbers with this, cook them, and strew them with parmesan cheese when you wish to serve them.

Item you chop veal with bacon, mace, eggs and gooseberries, fill the cucumbers with this, cook them, and dress them with butter and grated white bread and strew them with salt when you wish to serve them.

Item you fry spinach in olive oil, dress it with white bread, eggs, and small raisins, fill the cucumber with that, and dress them with olive oil, small raisins, vinegar and pepper.

Item you fry chervil and grated white bread in butter, stir it with eggs and chop it together with a little veal, fill the cucumbers with it, cook them and dress them with cut chervil etc.

Schmorgurken – thick-skinned, hard-fleshed cucumbers meant for cooking – are still common in Germany and sometimes prepared in much the same way described here. The cucmbers are peeled, the seeds scooped out, and a savoury filling placed in the cavity. They are then either slowly cooked in a pot in a small quantity of water, or baked. We do not know how de Rontzier wants his prepared, but either method looks plausible.

Franz de Rontzier, head cook to the bishop of Halberstadt and duke of Braunschweig, published his encyclopaedic Kunstbuch von mancherley Essen in 1598. He clearly looks to Marx Rumpolt’s New Kochbuch as the new gold standard, but fails to match it in engaging style or depth. He is thus overshadowed by the twin peaks of Marx Rumpolt and Anna Wecker. What makes his work interesting is the way in which he systematically lists versions of a class of dishes, illustrating the breadth or a court cook’s repertoire. He is also more modernly fashionable than Rumpolt. Looking to France rather than Italy and Spain for inspiration, and some of the dishes he first describes may be genuine innovations.

Anja says, “Hmm… we don’t have cucumbers like that in Oregon. …but all those stuffings would be good in (modern) cooking as fillings for squash, particularly the ones with bread, in the rather wet summer squashes that we get out here…. thinking zuchinni and relatives.”

Cooking and Herbs seems to be the most of what Anja and Loren are accomplishing. Other folks are doing scribal, sewing and other things. Sewing Workshop didn’t have anyone this week. Herbs in the Garden was just two of us.

Misc – Friends build real castle from scratch with simple tools only – Reality can beat the building frenzy in Minecraft, as seen in Guédelon Castle: in 1997, in a forest two hours south of Paris, a team of master-builders and enthusiasts began building a medieval castle using only the technology and materials of the Middle Ages.
25 years later, the great tower stands at 15 meters (49 feet), and the chapel with its cross-ribbed vault, are finished and plenty of amenities have been added like water cisterns, bread ovens, stone hand mills, and an onsite water mill.
The project began when two brothers who had just spent 20 years restoring an abandoned chateau they had bought for about $1000 (a few thousand francs) decided to buy a piece of land nearby to build a castle from scratch. They chose a former sandstone quarry because of the abundance of local natural resources onsite: stone, water, wood, sand (for mortar), clay (for roof tiles), and ochre (for pigment).
A team of quarrymen, stonemasons, carpenter-joiners, woodcutters, blacksmiths, tilers, rope makers, and carters began work on Guédelon Castle in July of 1997, eager to work together to revive heritage craft skills and shed light on the world of medieval construction.
Without electricity nor modern tools like mechanical cranes, the team relies on cart horses for all on-site transport of materials and giant wooden treadmill winches – basically, huge human hamster wheels powered by humans-, to do the heavy lifting of stones or beams. – Kirsten Dirksen

Hello From An Tir 12th Night 2023!
12th Night 2023 will be held in the Barony of Adiantum (Eugene, Oregon). Our event site is the lovely Valley River Inn, which is happy to host the SCA again.
For those new to the site, the “SCA block” is the entire hotel! The staff is friendly, with many having been our hosts at past events in their hotel. They know us, and they love our events. At 12th Night 2020, fifty-three+ hotel staff worked with Gold Key to wear garb during the work shift. It’s a welcoming space that’s all ours for the weekend!

This seems to be a kite-weapon assembled using silk, leather and canvas, possibly for dispensing foul smoke over an enemy camp. Götz Quarg notes that according to Johannes Dlugosz’ History of Poland, the Battle of Liegnitz was won by the Mongols using similar weaponry, brightly painted smoke dispensers full of chemicals that produced noxious gasses when shaken. This is what the Latin says, roughly: The flying dragon’s head may be made of leather, it’s center of canvas, but the tail of silk, colored differently. The head is located at the end of a three-part rotating body, assembled from wood, with a blower (zona – a drive unit?) in the middle. The head should be judged against the wind, and if it is so, let two lift his head, and a third party will bear the blower. Follow him [the dragon] on horseback, while the motion of its line of flight is directed upward, downward, rightward and leftward. Cookery – 

We were gifted a bundle of garden greens early on Wednesday including bok choy, oregano, thyme, sage, fennel and some bits of other things. The herbs went into the dryer, except for some of the oregano that went into the pickled cheese.

Farmer’s Market – “I have onions, two colors of beets, a head of lettuce, and a couple of bundles of carrots, some of which at the all-tangled up ones, again! I also got a couple of squash and the fellow was nice enough to throw in a bundle of baby spinach and another squash!”

Wed/Thurs eves were all veg prep and Thursday night a soup got started of various greens, onion, a leftover salad that was “going”, some chicken broth and water from a can of corn. Carrots were ready to go in, but the good peeler was still home, so those were done separately and added on Saturday. Thursday were also two batches of bread. Another batch of greens went into the freezer and Saturday was also the day that a “greens box” got done and the freezer re-arranged so it could be in there. The greens were beet, carrots, radish, onion, dandelion, oregano and some bits of herbs.

RECIPE
1 pound (½ kg) pork meat
Salt for seasoning
2 tablespoons (25g) Lard or another oil for cooking
1 ½ cups (125g) chopped spring onion, or leek
2 teaspoons brown mustard seeds, roughly crushed
1 teaspoon chopped mint
1 pound (½ kg) fresh berries
½ cup (120ml) water
½ cup (120ml) mead

  1. Season the meat, then heat the lard/oil in a pot on the stove. Sear the meat for 5-7 minutes until well browned. Then remove it and set aside.
  2. Add the onion to the pot and cook for 2-3 minutes, then add the water and mead and bring to a simmer. Add the mustard seed and mint and return the pork to the pot. Return to a simmer then cover the pot and place it in an oven at 325°F/160°C for 15-25 minutes or until the pork reaches 145°F. Then remove the pot from the oven and remove the pork to let it rest.
  3. Add the berries into the pot with the braising liquid and cook on the stove for 7-10 minutes or until very soft. Mash the berries, then pour everything through a strainer. Return the liquid to the pot and simmer for several minutes or until the sauce reduces down. The sauce will not become too thick without the addition of starch (optional).
  4. Slice the pork and serve with the sauce, extra berries, and mint.

Herb Bunch – 

I started on the garden, right away at 3pm on Wed., and Tempus got the water going for a couple of hours. I taped up the worst of the squirting spots. Nobody else showed. After that it was weeding and pictures and the sad discovery that the slugs/snails have gotten almost everything that I’ve seed-planted this year. It’s really frustrating. They even got to Audrey! I flipped the two new onions around into the pot, but dang… I managed to harvest some greens for soup and some herbs for iced tea, since it’s going to be hot over this weekend, and some strawberries. ….and then I had to stop working. Someone had a burn pile directly upwind, and despite a good mask with a brand-new filter I had trouble breathing. (Just changed the filter and it’s very brown….)

We went out to the spring for water and I got some pix of local plants.

Project Day – We had one (and then a 2nd) of the new people. We sat and sanded spoons and talked about history. Loren showed them one of his shepherd’s dials and I talked about the Orloi (the Prague Astronomical Clock) We gave each of them a “Key to the Dream”, necklace. They headed out before 2:30, since they had some other things to accomplish. Loren was cooking and I spent time at the computer, talking to Michelle, then tracking down links for the week.

Michelle – I found this box at a yard sale. I’d like to decorate it and use it for my awards and SCA accessories. I can use some ideas

Helen Louise – Getting ready for An Tir West war, finishing embroidery on Hobbit John tunic and finished Dame Johanna Trewpeny tunic and stola, all in yummy linen…

Peggy Vlach – Did some scribal work today. My hands got tired after a couple of hours but I have one ready for calligraphy and a second one almost ready.

Activities through 6-19-22 Potluck & Investiture

Entering the summer season means that things can go nuts for Anja and Loren. They certainly did this weekend! We had a great potluck and visit with Helen Louise, Hobbit John and Aelwynn Seamestre on Thursday and then a good potluck on Sunday, as well. Otherwise a lot of our time was taken up with mundane stuff.

Herbs in the Garden on Wednesday. Sewing Time on Saturday. Project Day on Sunday. Masks required. We’re keeping right on with the virtual meetings side-by-side with the actual.

Early Week – Most of what we going on was prep work, but Anja went to an Egil’s debrief Monday evening and work on a couple of small paper buildings while that was going on.

Cookery – This week, a lot of this, is going to be found under “potluck”. A new potage de Crecy got done for the Thursday guests. It cooked in the crockpot for 4 /12 hours on high and then 4 on low, so it was quite soft and *really* delicious. That’s not just *my* opinion, that’s what everyone said.

The “skyr cheese” was made that evening and finished on Friday, spiced with cheese salt and garlic powder.

On June 4, 1411, King Charles VI of France declared that only the people of the town of Roquefort-sur-Soulzon had the right to sell cheese with the official name of “Roquefort”.
This event is historically considered to be the first instance of a legally protected designation of origin, the effect of which still continues to this day! The name “Roquefort”, however, was already in use well before the intervention of Charles VI: some say that the cheese was already in production at the time of the Romans, and that even Pliny the Elder would have mentioned a blue-stringed cheese being made in the region. Without a definite birth date, however, it is safe to assume June 4 as the “formal” birthday of Roquefort!
What is certain is that, despite probably dating back even to prehistory, cheesemaking as a craft became incredibly widespread mostly during the Middle Ages: many popular cheeses, such as Camembert, Cheddar, Parmesan, and Gruyère, were in fact developed at this time. Cheese soon became essential for everyday life thanks to its efficiency in preserving milk (one of the greatest sources of quality nutrients at the time and today), making cheese a valuable product people could either store for winter or even sell: hard cheese (“Caseus vetus”, old cheese, in contrast whith “Caseus recens”, fresh cheese), especially, was extremely important, as it could be traded and carried by merchants for longer distances and longer periods of time. People would adapt the process of cheesemaking depending on the geographical characteristics of the region they lived in, leading to the great variety of products we know today; moreover, the main ingredient for medieval cheese seems to have been sheep’s (and not cow’s!) milk, at least up until the 14th or 15th century.

In this regard, Roquefort still represents the epitome of medieval cheese: made entirely from the milk of the Lacaune breed of sheep, the cheese is aged inside a set of local caves, where the characteristic mold (found in the soil of the caves) is also added.
Legend has it that Roquefort was “invented” when a young man, while eating plain cheese, saw a beautiful girl and quickly abandoned his meal in a nearby cave in order to follow her.
Months later, when he finally returned to the cave, he found that his cheese had molded, effectively transforming into Roquefort.

Feast Planning – We found a new recipe for “nut cake”. This looks like a possible for the “sweets” course for the feast. (see Recipes section)

Potluck – We actually had two this week! On Thursday, Helen & Hobbit John and Aelwynn Seamestre came out for the afternoon. We had a pot of potage de Crecy, bread, and nibbles which included smoked salmon, a salmon spread, a blueberry & vanilla goat cheese, pickled beets, pickled chickpeas, pickled black beans, chive butter, rainbow carrot pickle and “pickled”/marinated cheese. The last two in that list were experiments that we popped open for the first time that day.

On Sunday, the regular potluck day, we had more stuff and some guests, customers to the shop who got some nibbles and talked history for a bit. The lady is an old SCA-dian from Blatha an Oir, who hasn’t played in awhile.

Recipes

Nut CakePeterborough Vikings – Clan Wulfhar (collected on Facebook 6/18/22) – Nut cake made with hazelnuts apple eggs and honey. Traditionally this would have been cooked on a griddle pan hung over an open fire

  • 2 cups hazelnuts
  • 1 cup dried apple
  • 1 1/2 cups ml honey
  • 4 eggs

down to preference you may want to toast the nuts before mixing with other ingredients, if you don’t have a griddle and open fire it can be cooked in an oven

  1. Preheat the oven to 175°C
  2. Finely chop the hazelnuts and apple.
  3. Mix the nuts, apple and.honey in a bowl.
  4. Whisk in the eggs.
  5. Spread the mixture into a large circle on a greased baking tray.
  6. Bake on the middle shelf for approximately 15 minutes or until golden brown.

Although no recipes were written down from the Viking age, the ingredients used would have been widely available, and the recipe would have been passed down generation to generation, this recipe is one that is still used in modern day Scandinavia , so a variation of this could have been enjoyed as a Viking treat
